Characteristics:
The Purgatory bean is a typical product of the Alta Tuscia (Viterbo area
, famous for its characteristic of not having to be soaked or soaked for only an hour.)
The cultivation area of the Gradoli purgatory bean is limited only to the area characterized by soils of volcanic origin, in the territories of the municipalities of Gradoli, Grotte di Castro, Latera, Onano, San Lorenzo Nuovo and Valentano, and the southern part of Acquapendente.
The cultivation of the Purgatory bean (also called "Gradoli or Gradolese bean") has very deep roots: since 1600, on the occasion of Ash Wednesday, the "Purgatory Lunch" is organized in the Municipality of Gradoli "whose main dish were beans served with rice in broth and lake fish soups. The tradition dates back to the end of the 16th century when the Brotherhood of Purgatory began organizing this event to raise funds for their activities and families in difficulty.
