The processing naturally follows all the directives issued by the certifying body which controls the complete stages of the production cycle up to the final marketing of the product. The processed milk is all strictly from sheep.
The organic red pecorino cheese with 15/20 days of maturation, is treated on the crust with organic tomato concentrate, it is a bowl-shaped product. It remains a mild cheese and close to the crust, one perceives a bit of the tomato. A very classic Pecorino cheese from the area of Pienza.
